This red leaf variety of Shiso is traditionally used in Japanese cuisine to add a pink colouring to pickles but is also used as an ingredient to tofu dishes and wrapping meat. May also be added to soups, used as a garnish or added to salads. Red Shiso is also popular for micro-greens. Dried leaves can be shredded and sprinkled over rice.
