(Valerianella olitoria) Also know as Mache or Lamb's lettuce Corn Salad is a fast growing vegetable from southern Europe and western Asia producing rosettes of tender tasty leaves that are picked young for salad use. Older leaves can also be cooked like spinach. Growing Corn Salad is best during the cooler months of the year. Sow Corn Salad seeds in spring and autumn when soil temperatures are below20C or seeds may remain dormant. Protect young plants from hot wether with some shade otherwise they may bolt to seed. Harvest rosettes whole by cutting through the root beneath.
