An old fashioned salad and medicinal herb once popular in
early European gardens for its mild cucumber flavoured leaves and healing
properties.
This mostly evergreen herbaceous perennial plant forms clumps of
ferny leaves up to 40cm high, and produces tall stalks topped with delicate
pink flowers making it just as useful In the ornamental garden as the herb
garden. It is also easily grown in large pots and containers.
As an ingredient Salad
Burnet has many uses. They make a great addition to any salad and are ideal on
sandwiches, in soups and to flavour cold drinks and teas. For best flavour and
tenderness use the young leaves. Strip them from the stalk by running your
fingers along them.
