(Daucus carota sativus)
Deep Purple is one of the only true purple carrots on the market. Unlike many other purple carrots that have only purple skins or very shallow colour beneath the skin, Deep purple is a rich dark blackish purple almost to the core!
It has a delicious sweet flavour, making it a striking addition to salads, and best of all, retains its colour when cooked.
Depending on the cooking style it can behave similar to beetroot colouring other ingredients purple yet exhibit its unmistakable carrot flavour. Generally the colour will diminish with extended cooking times and colour is best preserved with short cooking times and high temperature such as in stir-frying.
