The Yam bean or Jicama bean is a tropical legume vine from Mexico and Central America and cultivated for its large fleshy tuberous roots.
The vigorous vines may climb many meters but in cultivation are often trimmed to a manageable length, including the removal of the flowers and bean pods which are toxic and should not be consumed.
This trimming also encourages better tuber formation.
Tubers may be harvested between 5 and 9 months. In frosty climates dig tubers as plants die down in autumn.
