Salsify is an annual or biennial vegetable grown for its uniquely flavoured , sweet tasting creamy white roots. The young shoots and flower buds produced in spring of the second year may also be eaten. Grows best in cooler climates. Requires a moist, well-drained soil in a sunny location. Sow seeds in spring. Harvest the roots from late autumn to winter when needed. As roots deteriorate quickly after being lifted from the ground Salsify is best used fresh.
