Popular European vegetable first developed from the chicory plant in Belgium whereby the leafy part of the plant is cut and removed.

Following this the plant is moved to a darkened room with the new emerging bud removed from light forms a smooth creamy coloured vegetable free from bitterness. 

Witloof is served in a variety of ways. Typically baked, boiled, or stuffed, or sometimes also cooked in a milk sauce.
