(Hyssopus officinalis)

A delightful lemon scented small evergreen shrub used as a culinary and medicinal herb.

The hyssop plant forms a small evergreen shrub 30-60cm tall. Woody stems emerge from a single base and are covered in small green aromatic leaves. Plants may die back to ground level in very cold climates and reshoot in spring. Clusters of small pink flowers are borne on the upper most parts of the stem in summer and are harvested and dried.

As a culinary herb, the young fresh green stem tips and young flowers may be added to cooking or salads for a fresh lemony flavour.

Medicinally, hyssop is used for the healing properties of its volatile oils, and are often extracted and administered by steeping the dried or fresh green leafy stems in hot water to make a soothing tea.
